Chicken Enchiladas
Makes about 10 enchiladas
6 Boneless chicken breast
¼ average size onion
1 pint sour cream
3 ¼ cups cheddar cheese
2 tablespoon parsley
1 teaspoon oregano
1 teaspoon black pepper
1 teaspoon sea salt
30 oz can tomato sauce
1 cup of water (or less depending on desired consistency)
2 tablespoon of chili powder
2/3 cup of bell peppers
2 cloves of garlic
2-12.5 oz of green taco sauce
10 tortillas- red eagle or tortilla lady are healthy choices.Dice chicken and cook. Add onions, sour cream, 2 cups of cheddar cheese, parsley, oregano, black pepper into sauce pan and heat until cheese is melted. After cheese melts add salt, tomato sauce, water, chili powder, green pepper, and garlic- cook until sauce is hot. Roll in tortilla, cover with green taco sauce and remaining cheddar cheese in glass casserole dish. Bake uncovered for 20 minutes at 350 degrees.
